Potato Peas Curry

INGREDIENTS

  • 1 medium Potato, peeled and cut into medium chunks
  • 1 grated Tomato and discard skin
  • ¼ Cup peas, shelved
  • 2 teaspoons Ghee
  • 1 teaspoon Cumin seeds
  • ¼ teaspoon Turmeric powder
  • ¾ teaspoon Coriander powder

 Method

  • Heat the Ghee in a Sauce and over medium heat for a minute. Add Cumin seeds.
  • Add Potato and peas, sauté, stirring occasionally for 5 minutes
  • Add Tomato, and cook for 2 minutes
  • Add the Turmeric, Coriander powder and Salt.
  • Add 2 ½ cups of Water and cook on medium heat for 5-8 minutes; making sure the Potato and peas have softened
  • Remove from heat and sprinkle with Cilantro
